How I made the Pumpkin Spiced Jam

As seen in my recent blog 'Halloween Cocktails' my first and most popular cocktail was the 'Old Pumpkin' a tasty Autumnal twist on the classic Old Fashioned cocktail with one of my main ingredients being my homemade Pumpkin Spiced Jam. It makes the cocktail and the best thing is it can be added to any cocktail to give it a unique Pumpkin Autumnal taste.


In each one of my cocktails I try my best to use fresh ingredients and make the majority of my syrups at home using fresh fruit. Here's how I made the Pumpkin Spiced Jam/syrup that anyone could whip up at home. Leave it in your fridge in a sealed bottle and it'll last you months and you only need to add around 10ml to each cocktail.


Approx servings: 10-15


Ingredients:

  • 3 tbsp of Fresh Pumpkin

  • Pinch of Cloves

  • 1 tsp of Turmeric

  • 1/2 tsp of grounded Cinnamon

  • 1 tsp of Vanilla Extract

  • 200g Brown or White Sugar

Method:

  1. Scoop out the pumpkin and mash it up with a blender or handheld blender.

  2. Place the pumpkin inside a cooking pot over a medium heat, then add the cloves, turmeric, cinnamon & vanilla.

  3. On top of all of this add the sugar and let it simmer until it reaches the consistency of jam (approx 20 mins). Don't stir it until the end.

  4. Allow to cool down before placing it inside a sealed bottle and inside the fridge.
